How to Make Suya at Home

The method
Slice the meat thinly. Suya works best with meat sliced quite thin, so it grills quickly and the spice coats it thoroughly.
Coat generously. Rub the meat with a little oil first, then coat heavily in suya spice — more generously than you'd season most other grilled meat. This is where the flavour comes from, so don't hold back.
Skewer and rest. Thread onto skewers and let it sit for at least 30 minutes if you have time — longer if possible, to let the spice penetrate.
Grill hot and fast. Cook over high heat (grill, griddle pan, or barbecue) until charred at the edges and cooked through — this shouldn't take long given how thin the meat is sliced.
Finish with more spice. A light extra dusting of suya spice right after grilling brings back some of the aromatic top notes that can fade slightly during cooking.
Serve traditionally. With sliced onion, tomato, and cabbage on the side.
